羊─本土羊市占率5％，新品種朝精緻化發展

一隻羊，各自表述：山羊在西方象徵堅毅（但在猶太文化中象徵叛逆），綿羊象徵軟弱、順服，《聖經》中象徵信徒，在台灣，象徵乖巧，在中華文化中，則因為諧音，象徵吉祥。

灣本土羊肉，味道鮮甜、幾乎無腥羶味，但產量極少，在養羊隻約28萬隻，每公斤500元左右；進口羊肉，幾乎都是老綿羊，腥羶味來自公羊的荷爾蒙，但價格才130元，所以台灣本土羊肉飼養量節節敗退，市占只剩5％。

羊為馴養極早之家畜，一般飼養上區分為山羊與綿羊，台灣畜牧業則以山羊飼養為主；羊肉在台灣一直被視為滋補強身與產後調理的重要食補材料，羊肉爐成為冬季特色菜餚。坊間流傳有「一黑、二黃、三花、四白」的羊種顏色購買偏好。

▋「墾丁山羊」結合三品種優勢

台灣常見的山羊品種，可依其用途區分為肉用山羊和產乳山羊兩類，品種來自世界各地，常見之肉用山羊品種有墾丁山羊、台灣黑山羊、波爾山羊；產乳山羊則有撒能山羊、阿爾拜因山羊、吐根堡山羊；努比亞山羊則是乳、肉兼用之品種。

台灣所飼養的山羊品種中，較特別的是墾丁山羊，該品種為結合三品種優勢所育成之肉用山羊，以黑色波爾種公羊，與努比亞及台灣黑山羊恆春品系雜交育成，擁有波爾山羊的快速生長與耐粗飼、努比亞山羊的優良肉質及良好母性，並兼具台灣本土黑山羊的抗病及黑毛色。

墾丁山羊長得快、肉質佳、環境適應性強，於2015年通過農委會新品種登記，正式命名為「墾丁山羊」，未來可朝建立特殊品牌羊肉產品與用途的方向努力。
