In the early morning hours of Puli, Nantou County, mountain mist still clings to the hillsides as the mushroom sheds release their first quiet breath of woody, fungal fragrance. Situated at roughly 500 meters above sea level, this mountain town enjoys cool, humid air averaging 18 to 22°C year-round. The surrounding Central Mountain Range supplies abundant timber and well-drained soil—conditions ideally suited to shiitake mycelium. Together, these factors have made Puli Taiwan's foremost shiitake-producing region, earning it the enduring title of “Mushroom Capital.”

Puli's shiitake cultivation dates to the Japanese colonial era. The golden age came between the 1960s and 1980s, when farmers relied almost exclusively on the log cultivation, or log-bed, method: trunks of Taiwan zelkova, Elaeocarpus, and Taiwan alder were cut into sections, drilled, inoculated with spores, and sealed with wax. The harvest came nearly ten months later. Labor-intensive as the process was, the mushrooms it yielded were thick-capped and richly fragrant—qualities that made them prized by the market.

Technology, Efficiency, and the Circular Economy

After the 1980s, growing environmental awareness prompted the government to ban the logging of natural forests, and the traditional log cultivation method gradually gave way to the growing bag technique. These bags, packed with a substrate consisting of a mixture of sawdust, rice bran, and other organic materials, cut growing cycles significantly and stabilized yields—shifting mushroom farming from the mountainside into purpose-built sheds. But climate change introduced a new pressure: shiitake mycelium slows its development above 25°C, making Puli's summers, averaging 26 to 28°C, a race against heat for every grower.

In recent years, the industry has entered a technological revolution. In collaboration with agricultural research institutes, farms have adopted water-curtain cooling greenhouses and vertical rack cultivation systems, using smart environmental controls to regulate temperature and stabilize output. Automated harvesting and stem-trimming equipment has further reduced the burden on farm labor. Meanwhile, spent growing bags are now collected and processed into biofuel and organic compost—closing the loop on agricultural waste and putting circular economy principles into practice.

Puli shiitake is more than a celebrated crop; it has also woven itself into local food culture. Fresh caps lend a distinctive sweetness to slow-simmered soups, hot pots, and tangyuan, or glutinous rice ball, fillings. Farms now offer hands-on experiences such as mushroom picking and make-your-own shiitake pizza. Local hot pot restaurants, meanwhile, build entire broths around thick-sliced caps, drawing visitors eager for a taste. This evolution from field to table has deepened the region's economic ecosystem as much as its culinary one.
